As a child growing up in London, breakfast for me was always a tartine. To me it was jam on bread, but to my French mother it was always a tartine – so much more exotic sounding, don’t you think?!
In the UK, I don’t think we really ‘get’ open sandwiches – a sandwich with a piece of bread missing – what is that all about?! The nearest we get to a tartine is the humble cheese on toast or baked beans on toast.
So, when I heard about the opening of a new restaurant at Unimail/Plainpalais offering tartines, I was intrigued to find out what they have on offer. I’m pleased to report that what I found at Toasted, perfectly fits the second description of the word ‘tartine’ found in the dictionary – fancy open-faced sandwiches – and delicious they were too!

WHO’S BEHIND THE TOASTED CONCEPT?
Childhood friends Stéphane Muller, Cesar Steffen and Alessandro Cavicchiolo are co-founders of Toasted. Two trained at the École Hôtelier in Lausanne (the breeding ground for some of Geneva’s newest happenings and firm favourites of ours – Elsalad, Voisins, Chantal & Max Experience).
WHAT’S THE CONCEPT?


Fresh seasonal open sandwiches, using carefully selected local products, either served in their restaurant (‘tart-in’) with a side salad and dessert or as a take away (‘tart-out’) when the tartine alone is served in what resembles a giant matchbox (see photo). Both spaces are decorated in an industrial retro diner style, with formica topped tables, rough plaster walls, leather and chrome bar stools and industrial metal lighting.
WHAT’S ON THE TOASTED MENU?
An interesting and varied choice of tartines, served on a retro aluminium tray with a side salad and dessert. I tried the Crayfish Citrus Tartine – a perfect mix of succulent crayfish, avocado, pink grapefruit and orange segments and topped with chives. The autumnal tartine with its wild mushroom topping went down very favourably with my lunch partner – flavoursome and a great option for the non-meat eater.
TRADITIONALLY MADE BREAD
Their ‘campagne’ style bread is prepared in a traditional way using a natural yeast and organic cereals and its long fermentation period means the bread is more easily digested than others. An alternative gluten free bread made from quinoa is also available – made by a local artisanal baker, who created the recipe after his son was found to be gluten intolerant.
DISCOVER TOASTED AT NIGHT
Perfect for an afterwork apéro, Toasted offers easy to drink wines from small organic producers, refreshing beers from Belgian and German microbreweries as well as a great cocktail list. Their tartines are still available in the evening and are the perfect way to combine a reasonably priced bite to eat with your favourite tipple.
Got a party or get-together to organise? Toasted also offer a space that can be reserved for up to 25 people.
WHAT’S NEW AND EXCITING?
Love the sound of a Sunday afternoon brunch with a cool and relaxed vibe? On Sunday 12th November 2017, Toasted teams up with event organisers The Inner Ear for their very first brunch entitled Notes n’ Toasts.
Gypsy jazz trio Sébastien Félix on guitar and NYC’s own John Intrator on fiddle will start the brunch off on the right note, followed by Geneva’s own blues man, Alex Aldridge on guitar.
With all you can drink Bloody Marys, an array of savoury and sweet tartines, eggs, tomato and mozzarella skewers and chicken skewers, cold cuts, smoked fish, cheeses, muesli, pastries and bread – served with a hot drink of your choice and fruit juice it’s a date not to be missed. Secure your place by reserving here for either their 12-2pm or 2-4pm slot. Walk-ins are also possible, as tables become available.
